Kid lasagna for grown ups

What’s your go-to comfort food?

Quickly realizing I don’t have one.

Not for comfort anyway, but cravings that need to be settled is another thing. I crave foods. Sometimes I crave a greasy pizza but more often than not, it’s my own homemade pizza I want. For most of the winter, Saturday was homemade pizza day. Three kinds, one to satisfy Clint and Sid, one for the girls and one for me (veggie).

This morning before I was even fully awake I was thinking of homemade alfredo sauce. I love making it. So easy. I was picturing it with chicken and penne instead of fettuccine for a change. I would saute some mushrooms too, to add to my own portion. Nobody else in my family appreciates mushrooms.

My all time favourite meal and what my mom always made for me on my birthday was roast chicken, mashed potatoes, gravy and stuffing. It’s still my favourite. I need to make that more frequently.

My go to meal that I make probably once a week is spaghetti and meat sauce. When I first started cutting back on sugar I read about how heavily laden spaghetti sauce is, with sugar and so I decided to make my own. Using canned or stewed tomatoes though and not fresh and unfortunately they contain as much sugar (almost), as the already prepared sauce.

I also love making lasagna. Each time I make it I make a regular lasagna with meat in it for Clint and Sid, a veggie lasagna for me and a “kid lasagna” for the girls. The girls who eat the kid lasagna are 23 and 17. I started that silly tradition when they were young as they were super picky and didn’t want onions, didn’t want ground beef in the sauce and blah blah blah. So theirs is simply layers of noodles, a tiny bit of sauce, some cottage cheese and then cheese. Gross.

Yesterday I baked a from scratch chocolate cake for a friend’s anniversary and Sid was upset it wasn’t for him so I made a second batch of the batter and made cupcakes with it. Not to toot my own horn but the icing I make and slather on top is everything! My personal little additions to the buttercream-ish icing are coffee, brown sugar and plenty of salt. Also, homemade cake tastes ten times better than a cake mix.

      1. Especially the chicken, mashed potatoes, gravy and stuffing. When my wife goes to Georgia next month, I’ll be cooking the chicken I have in the freezer!

    2. Also, mushrooms are amazing. It’s a constant here too, that no one likes mushrooms as much as I do, so I’m always adapting things them/me.
