Conquering hollandaise

What are your favorite types of foods?

Writing about food is fun but honestly, WP, it’s getting a bit repetitive.

I mentioned my affinity for greek yogurt and my homemade granola just last week I believe. It’s tops for me right now. I actually indulged in it twice yesterday. It leaves me feeling full for hours.

I’m a huge egg lover. I eat at least two eggs everyday. Sometimes more. Usually hardboiled because they’re handy to take to work to snack on. If I’m at home I like them scrambled with some hot sauce on them accompanied by a slice of rye toast. I also enjoy a good old fried egg sandwich with a slice of cheese in there, some mayo and some ketchup.

I get very excited when we go to Winnipeg as there is a multitude of restaurants to either go and sit down at or order in from using Skip the Dishes. The city I live in only has a handful of restaurants to choose from so it becomes very mundane but when we go to Winnipeg, the options are endless.

When the kids and I were in Winnipeg two weeks ago, I had said to the girls, lets not order Skip the Dishes to the airbnb the whole time we’re here like we usually do, let’s actually go out and sit down in some restaurants. I see all these cool places to eat at on Instagram but never actually make it to try them out.

Well factor a three year old into that equation, it’s difficult. Three year olds don’t care about cool places to eat, they don’t care about ambience. They don’t care about getting dressed up and going out. Mostly, they don’t want to sit still in a restaurant for sixty minutes. So my plan did not come to fruition. Except for one place where we had breakfast, we ended up ordering in the whole weekend.

Anyway, at that breakfast spot I had the most amazing eggs benedict. Which is one of my favourite ways to have eggs. The hollandaise was to die for, I wanted to swim in it naked. So creamy and rich but not too rich, and flavourful.

Hollandaise from scratch is something I need to attempt at home. I like making foods from scratch but hollandaise is a bit intimidating. I usually buy those packets that you just need to add butter and milk to and then cook it on the stove. I’m kind of embarrassed to admit that. I’ll put it on my to do list, conquering hollandaise.

    1. Yeah it’s probably one of those things you either love or hate…it’s also great on asparagus or a plain old chicken breast. Try it again!!!

  2. so nice to see another person who loves eggs benedict. it is truly one of the best things I’ve ever experience in my life! one of the more unexpected ways I enjoyed it was with salmon. i don’t know how it worked but it did lol. here’s to more eggs benedict in your future! Mike

    1. Oh yeah I often see that salmon option but I’ve always been too chicken to try it! That last one I had was eggs benny florentine and it had some spinach in it and it was to die for!

  3. The trick to Hollandaise is in the gentle tempering between the eggs and the melted butter over controlled heat. Constant whisking is also required in the classical method. Definitely worth the extra effort for the real thing, and impressive!

      Made on stovetop right? But have I seen it made in a food processor on cooking shows or no, that’s not a thing?

      1. Hmmm, I guess you could, but carefully, as it will turn to mayonnaise if whipped too long.

      2. Oh, stovetop yes, but double boiler or Bain Marie method is the way to go here.

  4. I make that same fried egg sandwich. Simple, but so good. My wife is the eggs Benedict fan in the family. She orders it every single time…

  6. I think I need to properly brunch more. 🙂 I’ve only had one excellent Hollandaise, so I’ll only order it in a really nice place.
