Lately we’ve really been digging spaghetti with meatballs that contain copious amounts of parmesan cheese. The meatballs have to be fried, fat is flavour after all, plus that crunchy texture on the outside is so yummy.
The spaghetti sauce, I’m ashamed to admit, is just your basic red sauce in a jar, usually the one that’s enhanced with garlic. I know they contain a lot of sugar, but then I also ADD sugar to it, just to get rid of any bitterness.
The meatballs take a bit of time to make but otherwise it’s a quick and easy weekday meal.
Sunday was the Grey Cup (Canada’s version of the Superbowl) and so I made the usual appies. Bacon wrapped stuffed jalapenos. My own cheater version of chicken waffles. Those are the two staples and then I usually make a third thing and Sunday it was Buffalo Chicken Dip. Which I swear I consumed half of myself.
If we are having a breakfast meal, which is sometimes my favourite supper, lately it’s been waffles with whipped cream, berries and bacon. It’s beyond delicious although I need to find a new waffle recipe as the one I have is too small for more than four people yet when I double it, we have waffles for days and usually end up throwing a couple in the garbage.
I was obsessed with making crepes a few years ago and we even bought a nice heavy “crepe pan” and the wooden crepe spreader and I tried to be a pro but it really does take practice to make a perfect crepe.
In other news, I finally got my butt down on my yoga mat this morning first thing. I did some deep breathing, practiced gratitude, jade roller’d my face and after I sent out my quotes on Snapchat, I did some yoga poses.
Muscle memory amazes me. It’s been over three weeks since I did any type of stretching but the downward dog, child’s pose, planking and forward fold were not as difficult or awkward as I had anticipated.
Feels good.
